McKenzie Makes: Black Bean Quinoa “Burgers!”

This past weekend I made a quinoa salad with edamame, tomatoes and mushrooms and made way more quinoa than I had bargained for. So I reserved the extra and figured I would find some way to use in the next few days. With some black beans and chipotle peppers in my pantry I figured I could make a “burger” of some sort and went ahead with creating a healthy leftover masterpiece!

Using leftovers to create a new dish is something I really enjoy and I’ve made some interesting dishes from the remnants of meals past in my fridge. I used sliced tomatoes as the “bun,” melted pepper jack cheese for a nice kick, added avocado to balance out the cheese and made a quick chipotle mayo to top it all off! The possibilities are endless with this recipe….and remember- don’t throw out your leftovers- get creative with them!!!!


  • 3 cups cooked black beans
  • 1 cup cooked quinoa
  • 1/2 cup bean sprouts, chopped finely
  • 2 large eggs, beaten
  • 1 bunch scallions, chopped
  • 1 tsp dried oregano
  • 2 cloves garlic, minced
  • 2 tsp crushed red pepper
  • 2 tsp sea salt
  • 1 tsp ground black pepper


  • sliced pepper jack cheese
  • sliced avocado
  • sliced tomatoes
  • chipotle mayo (see below)

To Make:

  • pre-heat oven to 400 degrees and lightly grease muffin tins
  • place 2 cups of cooked black beans in food processor and pulse until chunky
  • remove and place into large bowl
  • mix in remaining black beans, quinoa, bean sprouts, scallions, eggs, garlic, oregano, red pepper, salt and pepper
  • spoon into already prepared muffin tins and pat down to fill completely
  • bake for 10 minutes then remove and place pre-sliced pepper jack cheese over top and return to oven
  • bake for an additional 5 minutes
  • remove from heat and begin assembling “burger”
  • place tomato on plate, top with “burger,” slather mayo on top, add sliced avocado and top with a tomato slice
  • enjoy!

*Chipotle Mayo


  • 1/2 cup mayonnaise
  • 2 chipotle chiles from 1 can chipotles in adobo, chopped coarsely
  • 2 tablespoon fresh lemon juice
  • pinch of salt

To Make:

  • place mayonnaise and chipotle chiles in a bowl and stir to combine
  • add lemon juice and salt
  • taste and season with more salt if needed
  • enjoy!
