McKenzie Makes: Eggplant Marinara Flatbread!!!

Fast, fresh and easy; this eggplant marinara flat bread is a perfect way to kick off your next dinner party!


  • 4 TBL olive oil, divided into 2 TBL portions
  • 1 medium eggplant, cut into 1/2 inch rounds
  • 1 long loaf ciabatta, cut in 1/2
  • 2 cups fresh marinara sauce
  • 4 oz soft goat cheese
  • 1/3 cup chopped fresh basil plus 6 whole leaves for garnish
  • 1 medium orb of fresh mozzarella cheese, sliced into thin rounds
  • salt and pepper

To Make:

  • pre-heat oven to 400 degrees
  • heat 2 TBL of oil in large skillet over medium-high heat
  • sprinkle eggplant rounds with salt and pepper and place in skillet
  • cover and cook until tender turning periodically (about 10 minutes)
  • remove from heat, transfer eggplants to plate
  • brush cut side of ciabatta with remaining 2 TBL olive oil and cook in skillet, cut side down until golden (about 1 minute)
  • place bread cut side up on foil-lined baking sheet and spread with 1 cup of sauce
  • crumble goat cheese over and sprinkle with chopped basil
  • top with eggplant rounds and place fresh mozzarella slices over bread
  • spoon remaining sauce over and bake until topping is hot and crust is crisp (about 12 minutes)
  • cut into 6 pieces and garnish with fresh basil leaves
  • enjoy!!!
