McKenzie Makes: Savory Spring Dip Duo!

I wanted something healthy to bring to last night’s volunteer meeting at God’s Love We Deliver so I created two savory dips made with Greek yogurt and a few ingredients I always have in my kitchen. I cannot live without lemons or garlic and my boyfriend can’t enjoy a bloody mary without an obscene amount of  horseradish so I created two different dips from what I had on hand.

The lemon/horseradish has a nice little kick and tang to it and the cucumber/dill is light and refreshing and tastes very similar to a tzatziki sauce. Greek yogurt serves as a great base to make a variety of dips and sauces so have fun with it and experiment with what you have on hand in your kitchen!

Ingredients:

Lemon/Horseradish:

  • 1 cup greek yogurt
  • 2 TBL prepared horseradish
  • 1 tsp grated lemon zest
  • salt and pepper

Cucumber/Dill:

  • 1 cup greek yogurt
  • 1/2 large cucumber (halved, seeded, and chopped into small dice)
  • 1 TBL fresh lemon juice
  • 1/2 minced garlic clove
  • 1 TBL ground cumin
  • salt and pepper

To Make:

*same preparation for both but prepare in separate bowls!

  • mix ingredients together and season to taste with salt and pepper
  • serve with pita chips, vegetable chips, plantain chips, etc
  • enjoy!
