McKenzie Makes: Spicy Peanut Vermicelli Salad!

Need a quick and tasty salad to bring to that spring or summer BBQ? Look no further with this simple dish! This dish serves 8-10 people and takes less than 15 minutes to prepare! You can also add tofu or chicken if you want some protein! Enjoy!

Ingredients:

  • 1 box rice vermicelli noodles (8 oz)
  • 1/4 cup fresh lime juice
  • 3 TBL soy sauce
  • 4 TBL creamy peanut butter
  • 3 TBL dark brown sugar
  • 3 TBL vegetable oil
  • 1 TBL sriracha or hot sauce
  • 1 medium red bell pepper, thinly sliced
  • 1/2 cup scallions, sliced
  • 1/2 cup fresh basil, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh mint, chopped
  • 1/2 cup roasted peanuts, chopped
  • salt

To Make:

  • Boil 6 cups water
  • place noodles in large bowl and cover with the boiling water
  • let noodles soak until tender (about 10 minutes), drain and rinse under cold water until cool and place in serving bowl
  • whisk lime juice, soy sauce, peanut butter, brown sugar, hot sauce and vegetable oil until smooth
  • pour dressing over noodles, add bell peppers, scallions, basil, cilantro and mint and toss to combine
  • season with salt and sprinkle with peanuts
  • Enjoy!
